This design is perfect for holding sauces, as the ridges grab thick sauces, while the center fills with rich flavors and cradles bits of ingredients like vegetables or meats. Like all Sfoglini pasta, Zucca is made with premium semolina flour, a staple in traditional Italian pasta for centuries. We also use a traditional bronze die extrusion method to give the pasta a rougher surface for sauce to cling to. Zucca’s unique shape is ideal for hearty, creamy sauces, making it a favorite in comforting, rustic dishes. Directions Cooking instructions: in a large pot, heat four quarts of salted water and bring to a boil. Add the pasta and stir. Cook for six to seven minutes, stirring occasionally and then strain. Reserve two to three tablespoons of pasta water to add to your sauce.
